Healthy POHA Recipe

Poha is a popular Indian breakfast made with flatten rice which has variations in different parts of the country. Poha is a wholesome meal. It is a good source of carbohydrates, packed with iron, rich in fibre, a good source of antioxidants and essential vitamins and is gluten free. It is known to be good for those who have diabetes, skin and heart problems. To make it protein rich, one can add peanuts and sprouted legumes.

Directions:

  • Take Poha in a strainer, place the strainer under running water. Wash it and then place it over a bowl and let it water drain completely.                                            

  • Take salt and mix in the drained poha and mix well. Put it aside for 10 min. keep check it time to time with spoon. Doing this Poha will be non sticky.
                                    


  • In a saucepan heat oil. Add the mustard seeds and curry leaves (I didn't have it). Add peanuts and lightly saute till golden. Make sure Peanuts Do not burn.                                                                   



  • Add Chopped onion, Chopped green chilles, lightly mix, then add the turmeric and saute until masala cooks and onions turn translucent. Add some water then the jaggery powder (optional). Mix well.                                      

  • On a low flame, add poha to the tadka and mix well. Sprinkle water if required.


  • Mix till everything is mixed well and the poha is covered in masala. Sprinkle a little water and cover for a minute, make sure it's on a low flame so that poha doesn't stick to the bottom. sqeeze half lemon.


  • Garnish with some coriander leaves and serve hot.

Tips and variations:
  • You can add potato and other vegetables also.
  • Serve it hot because it does taste its best when hot.
  • You can have it with tea or with yogart. Some people like to have it with Jalebi also.
  • This can be taken as a healthy option in either as breakfast or as lunch.
